INGREDIENTS

Cabbage/Muttaikose - 1 medium size
Freshly Grated Coconut - 1/2 cup
Small Onions - 15
Ginger - 1 inch
Green Chilli - 2
Curry Leaves - 2-3 sprig
Turmeric Powder - 1/2 teaspoon
Salt - to taste

FOR TEMPERING

Coconut Oil - 3 tablespoon
Mustard Seeds - 1/2 teaspoon
Urad Dal - 1 teaspoon
Chopped Small Onion - 5
Dry Red Chilli - 1 (halved)

INSTRUCTIONS

1. To begin making the Onam Sadya Style Cabbage Thoran Recipe - Keep all the ingredients ready.

2. To Prep - Wash and chop the cabbage finely.

3. Wash and peel the small onions and ginger.

4. To Crush - In a mortar, add peeled onion, ginger and green chilli.

5. Using the pestle, roughly crush the ingredients.

6. To Mix - Take a deep bowl or wide plate, add chopped cabbage, crushed onions, ginger, green chilli, salt, turmeric, freshly grated coconut and chopped curry leaves.

7. Gently mix all the ingredients together and keep them aside.

8. To Cook - Heat 2 tablespoons of coconut oil in a heavy bottom kadai, add mustard seeds and allow them to splutter.

9. Add urad dal, dry red chilli, chopped small onions and curry leaves and fry for a few seconds.

10. Now add the cabbage mixture and stir fry for a few seconds.

11. Reduce the flame to the lowest heat and cook for 8-9 minutes.

12. Keep stirring in between cooking.

13. Once the cabbage is completely cooked, check for the salt and adjust accordingly.

14. Turn off the flame.

15. Finally, add the remaining 1 tablespoon of coconut oil and mix well.
