How to make Nawabi Semai Recipe?

Ingredients for Nawabi Semai Recipe
For roasting vermicelli
Thin Vermicelli Crushed/Thin Semai - 2½ cups
Powdered Sugar - 3 tablespoons
Milk Powder - 2 tablespoons
Ghee or Clarified Butter- 2 tablespoons
For making slurry
Corn starch - 2 tablespoons
Custard powder - 2 tablespoons (Vanilla Flavour)
Cold milk- ¼ cup
For making Custard Pudding
Milk - 2 cups
Sweetened Condensed Milk- ½ cup
Sugar- ¼ cup
Cardamom Powder - 1 teaspoon
For Garnish
Almonds, Crushed - 2 tablespoons
Rose Petals - 2 tablespoons
Instructions
To make Nawabi Semai, use thin roasted vermicelli that is mostly available in Indian & Middle Eastern stores.
1. In a wide plate or deep large bowl, add the thin vermicelli and try to crush it as small as possible.
2. Add powdered sugar and milk powder and mix well.
3. Place a wide pan over medium heat, add butter or ghee, and heat until it melts. Turn off the flame and rest for a few seconds.
4. Add the vermicelli and mix well using your hands.
5. Now bring back to heat and roast for 5-7 minutes until a nice aroma appears & the vermicelli turns golden brown in colour.
6. Transfer the roasted vermicelli to the pan and allow it to cool down.
7. To a bowl, add cornstarch, custard powder & ¼ cup cold milk and combine well without any lumps.
8. Place a saucepan over medium heat, add 2 cups milk, condensed milk, sugar, and combine well.
9. Let the milk cook for 3 minutes. Don't have to boil the milk. Add the cornstarch-custard slurry and keep stirring. Cook till the mixture thickens, then add the cardamom powder and mix well. Take the pan off the heat and let it cool down.
10. To layer the vermicelli and the custard pudding, take a deep dish, preferably a baking tray. Spread half of the roasted vermicelli into the tray as the bottom layer.
11. Top with custard pudding and layer with the remaining half of the roasted vermicelli on top of the custard pudding. Garnish with almonds and rose petals.
12. Keep it in the refrigerator and let it chill for a couple of hours or overnight.
13. Enjoy this rich, creamy, and delicious Nawabi Semai.
