How to make Chicken Gravy Muslim Style Recipe?

Ingredients for Chicken Gravy
Chicken - 1/2 kg
Large Onion - 2
Large Tomato - 2
Green Chilli - 1
Curd - 1/4 cup
Ginger (chopped) - 2 tablespoons / 25 gms
Garlic - 8 / 15 gms
Mint Leaves - 1 handful
Coriander Leaves - 1 handful
Curry Leaves - 1 handful
Salt - to taste
Cashew Nuts - 10 Pieces (optional)
Spice Powders
Red Chilli Powder - 1 teaspoon
Turmeric Powder - 1/2 teaspoon
Cumin Powder - 1 teaspoon
Pepper Powder - 2 teaspoons
Tempering
Oil - 1/4 cup
Ghee - 2 tablespoons
Cinnamon - 2" pieces
Cardamom - 3
Cloves - 3
Instructions
1. Wash the chicken thoroughly with 4-5 exchanges of water. Then, set it aside to allow the water to drain completely from the chicken.
2. Peel, wash and slice the onions. Also, chop the tomatoes, coriander, and mint leaves. Then, set them aside.
3. Peel, wash and chop the ginger and garlic. Grind them to a fine paste.
4. Heat oil and ghee in a heavy-bottomed kadai. Add cinnamon, cardamom, and cloves and fry them for a few seconds.
5. Add the sliced onions and fry for 2-3 minutes or until the colour changes lightly.
6. Now, add the ginger-garlic paste and fry for a few seconds. Also, add the mint and coriander leaves. Give them a mix.
7. Add the chopped tomatoes, green chilli, and cashew nuts. Cook for 2-3 minutes.
8. Take a small bowl and add the curd, red chilli powder, turmeric, and salt. Whisk them well and set the mixture aside.
9. Add the curd mixture to the pan and sauté it for a few seconds.
10. Keep the flame medium and cook for 3-4 minutes or until oil releases from the sides. Keep stirring the mixture between cooking.
11. Add the chicken and wait for 1 second before stirring.
12. Now, gently stir the chicken to mix it well with the gravy.
13. Keep the flame over medium heat, close the pan with the lid, and cook the chicken for 6-8 minutes.
14. Keep stirring the mixture in between cooking.
15. Once the chicken is cooked, add the curry leaves, cumin and pepper powder. Give them a mix and cook for a minute.
16. Check for salt and adjust it accordingly.
17. Turn off the flame. Sprinkle curry leaves and coriander leaves on top.
18. Your lip-smacking Muslim-Style Chicken Gravy is ready to serve!
