1. What is Puttu?
Puttu is a popular and traditional dish hailed from the south Indian states of Kerala, Tamilnadu and Karnataka. It is also a popular and traditional dish in Sri Lanka.
Puttu is typically prepared with coarsely grounded rice flour, wheat flour or millet flour. Puttu is steamed in a long layered and cylindrical dish. Puttu is usually served as a breakfast dish with either a sweet version or a savoury version. In this post, I've shared a sweet version of the Puttu Recipe.
2. What is Aval/Poha/Flattened Rice?
Aval is a Tamil term used for flattened rice or beaten rice. It is also popularly known as poha, chivda and avalakki.
Aval is made from rice grains. Rice grains can be white, red, or black. To make aval, rice grains are soaked or par-boiled, dried, roasted and flattened with rollers. Aval is usually made in 3 varieties thin, medium and thick varieties. In this aval puttu recipe, I've used a thin variety of aval.

Aval Puttu is a popular recipe usually made during Hindu festivals like Krishna Jayanthi, Navratri, Saraswati Poojai or Ayudha Poojai. It is typically prepared as a Neivedyam (offering food to God).
Aval Puttu is prepared with aval/poha/flattened rice as the main ingredient and flavoured with jaggery, cardamom powder, grated coconut, ghee, cashew nuts and raisins.

How to make Aval Puttu Recipe?/How to make Poha Puttu Recipe?/How to make Flattened Rice Sweet Puttu Recipe?
Aval Puttu/Poha Puttu/Flattened Rice Sweet Puttu s a healthy, tasty and quick festive sweet recipe. You can easily make this Aval Puttu/Poha Puttu recipe within 15-20 minutes and serve it as a breakfast recipe, snack recipe and as a prasadam.

Timing - 20 minutes
INGREDIENTS
Aval/Poha/Flattened Rice - 1 cup
Jaggery - 1/2 cup (heaped)
Cardamom Powder - 1/2 teaspoon
Cashew Nuts (Broken) - 4
Raisins/Dry Grapes - 6
Grated Coconut - 1/4 cup
Ghee - 1 tablespoon
Water - 1/4 cup
Warm Water - 1/4 cup
Salt - a pinch
INSTRUCTIONS
1. To begin making the Aval Puttu Recipe/Poha Puttu Recipe/Flattened Rice Sweet Puttu Recipe - Keep all the ingredients ready.
2. To Cook - Heat a pan add 1 teaspoon of ghee and aval/poha and roast for 1 minute.
3. Transfer to a plate and cool completely.
4. Now grind it to a coarse powder.
5. To Roast - Heat the remaining ghee in a pan and add cashew fry for a few seconds and then add raisins and grated coconut fry for a few seconds. Turn off the flame and transfer it to a small plate. Keep it aside.
6. To make Jaggery Water - Heat 1/4 cup of water and add jaggery stir well and allow the jaggery to melt in the water.
7. Turn off the flame and strain the jaggery water.
8. To make aval puttu - In a bowl, add ground aval flour, and salt and sprinkle warm water and mix by rubbing between your thumb and fingers for 2-3 minutes.
9. Once all the ingredients are mixed well they should resemble breadcrumbs.
10. To check the consistency of the aval puttu mixture - take a fistful of aval puttu mixture and hold it tightly to form a lump and crumble them back (if you get the lump form and it is easy to crumble back, the aval puttu mixture is perfect).
11. Keep it aside.
12. To make Jaggery syrup - Heat a pan over a medium flame and add jaggery water. Keep stirring for 2-3 minutes.
13. Keep the small cup of water to check the consistency of the jaggery syrup.
14. Once the jaggery syrup started to thicken, pour a few drops into the water. When it is dissolved in the water, continue cooking the syrup.
15. Check again in a few seconds. If it is not dissolved in the water and you can able to take it out from the water in soft ball consistency. Stop cooking.
16. Turn off the flame immediately.
17. Now add aval puttu mixture, cardamom powder and roasted coconut and nuts.
18. Mix well.
