How to make a Potato Gojju Konkani (Batate Gojju) recipe?

INGREDIENTS

Potato (medium-sized) - 2
Green Chillies - 2
Curd - 2 tablespoons
Warm Water - 1/2 cup
Water - 2 cups
Salt - to taste
Coriander Leaves - 1 tablespoon

TEMPERING

Oil - 2 teaspoon
Mustard Seeds - 1/4 teaspoon
Curry Leaves - 1 sprig
Sun Dried Red Chilli (or) Dry Red Chilli - 1
Asafoetida - 1 pinch

INSTRUCTIONS

1. To start preparing the Potato Gojju Konkani | Batate Gojju, gather all the required ingredients.

2. To Boil - Wash, peel and chop the potatoes into chunks.

3. Heat water in a pan and add chopped potatoes with the required amount of salt.

4. Cook the potatoes until softly boiled.

5. Drain the water completely. Rest for a few minutes.

6. Mash the potato roughly.

7. Crush the green chilli in the warm water and filter it.

8. Mix the chilli water with curd and bring it into buttermilk.

9. Add this spiced buttermilk to the mashed potato. Mix well.

10. To Temper - Heat oil in a tadka pan, add mustard seeds and allow them to splutter.

11. Add sundried red chilli or dry chilli and fry for a few seconds.

12. Turn off the flame and add curry leaves and asafoetida. Mix well.

13. Add to the potato gojju and garnish with coriander leaves.

14. Check the salt and adjust accordingly.
