INGREDIENTS

Bitter Gourd (large) - 1
Potato (large) - 1
Salt - to taste
Turmeric Powder - 1/4 teaspoon
Red Chilli Powder - 1 teaspoon
Water - as needed

TEMPERING

Oil - 2 tablespoons
Mustard Seeds - 1/4 teaspoon
Small Onions - 5 to 6
Curry Leaves - 1 sprig

INSTRUCTIONS

1. Gather all the required ingredients to start preparing the Pavakkai Urulai Kilangu Varuval | Bitter Gourd and Potato Fry.

2. To Prep - Wash and chop the bitter gourd into thick half-finger-size strips. Wash, peel, and chop the potato into thick half-moon slices. Set aside.

3. To Cook - Heat a pan, add chopped bitter gourd, potato, turmeric, red chilli powder, salt and 1/2 cup of water.

4. Bring it to a boil and cook over a moderate flame for 5-6 minutes.

5. Turn off the flame. Set aside.

6. To Temper - Heat oil in a pan, add mustard seeds and allow to splutter.

7. Add small onions and curry leaves. Stir for a few seconds.

8. Now add the cooked vegetables. Stir fry for 4-5 minutes on a medium flame.

9. Once the vegetables are cooked. Turn off the flame.
