In my home, agar-agar milk pudding (kadal paasi milk pudding) is an indispensable recipe during Ramadan. My nanima (maternal grandmother) and my amma (mom) are experts in making agar-agar pudding.

Every day during Ramadan, we make agar-agar pudding. The iftar meal is completed with agar-agar pudding after the fast is broken with dates and water, fruits, nombu kanji, aama vadai (paruppu vadai/lentil fritters), and nannari sharbath or rose milk. The leftover pudding was sometimes eaten after Taraweeh prayers or Sehri.

3. Sugar - This milk pudding is typically made with white sugar. Because alternatives such as jaggery or palm sugar will curdle the milk.

To dissolve China grass in water, first, wash them in 2-3 changes of water and then soak them in enough water for at least 5 minutes and up to 30 minutes. Finally, bring them to a gentle boil over medium heat.

INGREDIENTS

Full-cream milk - 500 ml
Sugar - 1 cup
Agar-agar/Kadal paasi - 7 gms
Water - 1 cup

INSTRUCTIONS

1. To begin making the agar-agar pudding recipe - Keep all the ingredients ready.

2. To Soak - Wash the agar-agar in 2-3 exchanges of water. Soak them in water for 5 minutes.

3. To Cook agar-agar - In a small saucepan, add soaked agar-agar strips with water.

4. Now, place the saucepan on the stove and heat over moderate flame.

5. Keep stirring the agar-agar to dissolve in water.

6. To Boil the Milk - Meanwhile, boil the full cream milk in the saucepan.

7. Allow the milk to boil.

8. You have to do both simultaneously.

9. Once the agar-agar strips are completely dissolved in the water.

10. Add sugar and allow it to melt completely.

11. Now add them to the boiling milk and mix well.

12. Cook for a further 2 minutes and switch off the flame.
