How to make Chettinad Summa Kuzhambu?

Chettinad Summa Kuzhambu is a simple and unique south Indian curry/side dish. You can easily prepare this Chettinad Summa Kuzhambu recipe in 30 minutes and serve it as an accompaniment to any breakfast item.

INGREDIENTS

Small Onions/Shallots (Chopped) - 15 nos
Tomato (Chopped) - 1
Garlic With Skin (Crushed) - 12
Tamarind - 1 tablespoon
Water - 4 cups
Oil - 1 tablespoon

FOR SPICE POWDERS

Chilli Powder - 1 1/2 teaspoons
Coriander Powder - 2 1/2 teaspoons
Salt - to taste

FOR GARNISH

Curry leaves - 1 Sprig
Coriander Leaves - a handful

INSTRUCTIONS

1. To begin making the Chettinad Summa Kuzhambu recipe - Keep all the ingredients ready.

2. To Soak - Wash the tamarind in 1-2 exchanges of water and soak them in 1/2 cup of water for 15 minutes.

3. To Mix - Add chopped tomato, chilli powder, coriander powder, salt, curry leaves, coriander leaves and tamarind extract in a wide bowl.

4. Add the remaining water and mix well.

5. Keep it aside.

6. To Cook - Heat oil in a pan over a moderate flame, add chopped onions, and fry for a few minutes.

7. Add tamarind extract mix.

8. Stir well and bring to a boil.

9. Reduce the flame and cook for 5 minutes.

10. Check for salt and adjust accordingly.

11. Finally, add the crushed garlic and cook for 1 minute.

12. Turn off the flame and sprinkle with curry leaves and coriander leaves.

13. Chettinad Summa Kuzhambu is ready.

You can serve this Chettinad Summa Kuzhambu with idli, dosai or even with rice. I personally like to eat this summa kuzhambu with kal dosai.
