Ingredients
Raw Rice/Pachai Arisi - 1 cup
Yellow Moong Dal - 1/4 cup
Water - 3 cups
Full Fat Milk - 1 cup
Salt - 1 pinch
For Jaggery Syrup
Jaggery - 2 cups
Water - 1/2 cup
For Tempering
Ghee - 1/2 cup
Cashew Nuts - 10 to 12
Kishmish/Raisins - 8 to 10
Flavorings
Cardamom Powder - 1 teaspoon
Instructions
Sakkarai Pongal, also known as Chakkara Pongali or Sweet Pongal, is a delicious recipe that you can easily make at home within 30 minutes. To make it, you will need raw rice (pachai arisi), yellow moong dal, milk, jaggery, ghee, water, cardamom powder, cashew nuts, raisins, and a pinch of salt.
Here's how to prepare it:
1. Begin by collecting all the necessary ingredients.
2. Heat a pressure cooker, add yellow moong dal and dry roast for a few seconds. Then transfer it to a bowl and let it cool.
3. Clean the raw rice by winnowing and removing any debris and grits.
4. Mix the rice and yellow moong dal, and wash them thoroughly in 3-4 exchanges of water.
5. Transfer the washed rice and dal to a deep bowl, add 3 cups of water, and soak for 5 minutes.
6. Heat a pressure cooker and add 1 cup of milk.
7. Drain the water from the rice and add it to the pressure cooker along with milk. Let it heat up.
8. Add the rice and moong dal and a pinch of salt. Close the lid and cook for 3-4 whistles.
9. Turn off the flame and let it rest for 5 minutes.
10. Meanwhile, add the jaggery and 1/2 cup of water in a heavy bottom pan. Allow the jaggery to melt completely. Turn off the flame, filter it, and set it aside.
11. Open the pressure cooker, and mash the rice completely using a ladle.
12. Now turn on the flame, heat over a low flame, and add the jaggery syrup.
13. Cook for 3-5 minutes over a low flame, stirring constantly.
14. Heat 2 tablespoons of ghee in an iron kadai, add cashew nuts and fry until golden. Add raisins and fry for a few seconds. Turn off the flame.
15. Add the fried nuts along with ghee to the sakkarai pongal and mix well.
16. Finally, add the remaining ghee and cardamom powder and mix well.
17. Your Sakkarai Pongal/Sweet Pongal is ready to serve.
