Ingredients for Gutti Bendakaya
Bendakaya/Lady's Finger/Vendakkai/Bhindi - 400 gms
For Spice Powder
For Oil - 1 tablespoon
Dry Red Chilli - 6
Coriander Seeds - 1 tablespoon
Cumin Seeds - 1 tablespoons
Curry Leaves - 2 sprig
Turmeric Powder - 1/4 teaspoon
Salt - to taste
For Tempering
Oil - 2 to 3 tablespoons
Mustard Seeds - 1/2 teaspoon
Curry Leaves - 2 sprigs
Instructions
To prepare Gutti Bendakaya Koora, you need to start by gathering all the required ingredients.
1. Then, wash the lady's finger/bhindi in 2-3 exchanges of water and drain the water completely.
2. After that, wipe the lady's finger using a kitchen towel.
3. Next, chop the top and tail of the lady's finger/bhindi and further cut them into 2-inch pieces.
4. Heat a tablespoon of oil in a pan and add dry chilli, coriander seeds, cumin seeds and curry leaves. Roast for a few minutes, turn off the flame and cool completely.
5. In a mixer grinder, add the roasted ingredients with turmeric powder and salt and grind them coarsely.
6. Slit the lady's finger/bhindi vertically in the centre without chopping them into two.
7. Stuff the coarsely ground spices into the lady's finger/bhindi and keep it aside.
8. Heat oil in a pan and add mustard seeds, allowing them to splutter.
9. Then, add curry leaves and fry for a few seconds.
10. Now, add the stuffed lady's finger/bhindi and stir fry for a few minutes.
11. Keep the flame to the lowest heat, close the lid and cook for 8-10 minutes.
12. Keep stirring in between cooking. Once the lady's finger/bhindi is cooked, turn off the flame.
13. Check for the seasoning and adjust accordingly.
14. Your Gutti Bendakaya Koora is ready to serve.
