Ingredients for Vellai Kurma/White Kurma
Potato - 2
Green Peas - 1/2 cup
Green Chilli - 1
Salt - to taste
Water - as needed
For Roasting
Green Chilli - 3
Pottu Kadalai/Roasted Chana Dal - 1 tablespoon
Poppy Seeds/Khus Khus - 1 teaspoon
Grated Coconut - 3/2 cup
Fennel Seeds - 1/2 teaspoon
For Tempering
Oil - 3 tablespoons
Fennel Seeds - 1/4 teaspoon
Bay Leaves - 1
Star Anise - 1
Curry Leaves - 2 sprig
Instructions
1. Begin by collecting all the required ingredients.
2. Wash the potatoes, green peas, and green chilli thoroughly.
3. Cut the potatoes into small pieces and keep them aside.
4. Heat the pressure cooker and add chopped potatoes, green peas, 1 green chilli, 1/2 teaspoon salt, and 2 cups of water.
5. Close the lid and pressure cook for 3 whistles. Turn off the flame and let it rest for 5 minutes.
6. Meanwhile, heat 1 tablespoon of oil in a pan and add fennel seeds, poppy seeds, roasted chana dal, green chilli, and grated coconut. Roast for 2 minutes over medium flame.
7. Turn off the flame. Let it rest for a few seconds and grind the mixture into a fine paste.
8. Heat oil in a heavy-bottomed kadai. Add bay leaves, fennel seeds, and star anise and fry for a few seconds.
9. Add the coconut paste and mix well.
10. Now add the boiled vegetables along with the water and mix well.
11. Once again, add enough water, salt, and curry leaves and let it cook for 5-8 minutes over medium flame.
12. Once the oil floats on the top and all the other ingredients are cooked well, turn off the heat.
13. Your Quick and Easy Vellai Kurma or Veg White Kurma is now ready to serve.
