Kongunadu Pachai Puli Rasam Ingredients

Tamarind/Puli - 1 (large lemon sized)
Small Onion - 6
Green Chilli - 1
Garlic - 3
Curry Leaves - 1 sprig
Coriander Leaves - few leaves
Cumin Seeds - 1 teaspoon
Peppercorns - 1 teaspoon
Crystal Salt/Kal Uppu - as needed
Water - 3 cups

INSTRUCTIONS

1. Begin by washing the tamarind and soaking it in a cup of water for 30 minutes.

2. While the tamarind soaks, wash and peel the onions and garlic.

3. Also, wash the green chillies, curry leaves and coriander leaves.

4. Take a mortar and pestle and pound the onion, garlic, and green chilli together. Set the mixture aside.

5. Next, pound the cumin and peppercorns, and set it aside.

6. Fine chop the curry leaves and coriander leaves together.

7. After 30 minutes, gently squeeze the soaked tamarind and extract the paste.

8. In a deep bowl, add the crushed onion mixture and half of the tamarind water.

9. Using your fingers, crush and mix the ingredients together.

10. Add the remaining water, chopped coriander, curry leaves, pounded pepper, cumin seeds powder, and salt.

11. Again, use your fingers to crush and mix the ingredients together.

12. Check for salt and adjust the seasoning accordingly.

13. Your Kongunadu Pachai Puli Rasam is now ready to serve.
