Kongu Thakkali Kulambu Ingredients
Thakkali/Tomato - 5
Small Onions - 10
Garlic - 4
Ginger - 1 inch
Red Chilli - 3
Fennel Seeds - 1/2 teaspoon
Cumin Seeds - 1/2 teaspoon
Peppercorns - 1/2 teaspoon
Rice Grains - 1 teaspoon
Roasted Chana Dal - 1 teaspoon
Coconut - 2 tablespoon
Khus Khus - 1/2 teaspoon
Cinnamon - 1 inch
Cloves - 2
Coriander Powder - 1 tablespoon
Turmeric - 1/2 teaspoon
Red Chilli Powder - 1 teaspoon
Salt - as needed
Water - as needed
For Tempering
Oil - 3 tablespoons
Mustard Seeds - 1/2 teaspoon
Cumin Seeds- 1/4 teaspoon
Fennel Seeds - 1/4 teaspoon
Chana Dal - 1 teaspoon
Big Onion - 1 (medium-sized)
Dry Red Chilli (halved) - 2
Curry Leaves - 1 sprig
Coriander Leaves (chopped) - 2 tablespoons
INSTRUCTIONS
1. Wash and roughly chop the tomatoes, peel the ginger, small onions, and garlic, and slice the large onions. Set them aside.
2. Heat a tablespoon of oil in a pan, and add cumin seeds, fennel seeds, and peppercorns. Fry for a few seconds.
3. Add the rice grains and fry them until they start popping, then add the onions, garlic, and ginger. Fry until golden.
4. Add the dry red chilli and roasted chana dal. Fry for a few seconds.
5. Transfer the mixture to a plate.
6. In the same pan, add a teaspoon of oil, cinnamon, cloves, and chopped tomatoes. Fry until the tomatoes turn mushy.
7. Add the khus khus and fry for a few seconds, then add chopped coconut. Give them a stir.
8. Add turmeric, red chilli, and coriander powder. Fry for a minute.
9. Turn off the flame and allow the mixture to cool completely.
10. In a mixer grinder, add the roasted spices and give them a quick coarse grind.
11. Add the tomato mixture to the mixer grinder and grind into a coarse to fine paste.
12. Transfer the paste into a deep bowl and dilute it with enough water.
13. Heat oil in a heavy-bottomed pan, add mustard seeds and allow them to splutter.
14. Add cumin, fennel, dry red chilli, chana dal, and curry leaves. Fry for a few seconds, then add the sliced large onions and fry for a minute.
15. Add the tomato curry and salt. Allow it to boil for 8-10 minutes on a low flame.
16. Finally, turn off the flame and add the coriander leaves.
