How to make Baingan Ka Bharta Recipe?

Baingan ka bharta is a popular North Indian dish made with roasted eggplant (baingan) that is mashed and cooked with various spices. It's a flavorful and smoky dish that is often enjoyed with Indian bread like roti or naan. Here's a recipe for making baingan ka bharta:

Baingan Ka Bharta Ingredients

Baingan/Eggplant/Brinjal/Aubergines - 1 (larger variety)
Onion - 1
Tomato - 1
Green Chilli - 2
Ginger - 1 inch
Salt - to taste
Kashmiri Red Chilli Powder - 1 teaspoon
Coriander Leaves - 1/4 cup

For Tempering

Oil or Ghee - 2 tablespoons
Cumin Seeds - 1/2 teaspoon
Dry Red Chilli (Halved) - 1

Instructions

To prepare the Baingan Ka Bharta recipe:

1. Begin by washing the vegetables and finely chopping the onion, tomato, and ginger. Slit and remove the seeds from the green chillies and chop them finely. Set these ingredients aside.

2. Next, wash and pat dry the baingan, poke it randomly and apply a teaspoon of oil.

3. Heat a phulka net grill or stainless steel net jali over medium flame, place the baingan on it and roast it directly on fire.

4. Carefully flip it with tongs to smoke all sides.

5. Once the baingan is cooked, the skin becomes completely charred, and the whole baingan becomes light and soft.

6. Make sure to cook it thoroughly by checking the baingan with a fork. If it easily goes in and comes out, the baingan is ready.

7. Immediately put the cooked baingan in water, peel off the skin and remove the stem. Mash the baingan and set it aside.

8. Heat oil or ghee in a heavy bottom kadai, add cumin seeds and dry red chilli fry for a few seconds.

9. Add the onion and saute until it becomes translucent.

10. Then, add the ginger and green chilli and fry briefly.

11. Now, add the tomato and stir once. Add chilli powder and salt and mix well. Cook until oil oozes out from the sides.

12. Add the mashed baingan and mix well. Cook for 1-2 minutes.

13. Finally, add the coriander leaves and 1 teaspoon ghee (optional).

14. Mix well and turn off the flame. Check for seasoning and adjust accordingly.

15. Your Baingan Ka Bharta recipe is now ready to be served!
