How to make Bendakaya Vepudu Andhra Style?

Bendakaya Vepudu is a simple and tasty South Indian dish that can be easily prepared within 30 minutes. This recipe is a perfect accompaniment to rice or chapati.

INGREDIENTS

Bendakaya/Okra/Vendakai - 250 gms
Onion - 1
Garlic - 8 (medium size)
Peanuts - 1/4 cup
Coriander Leaves (Chopped)- 1 tablespoon

SPICES

Red Chilli Powder - 1 teaspoon
Dry Red Chilli Flakes - 1 teaspoon
Turmeric - 1/4 teaspoon
Salt - to taste

TEMPERING

Oil - 2 tablespoons
Mustard Seeds - 1/4 teaspoon
Urad Dal - 1/2 teaspoon
Chana Dal - 1/2 teaspoon
Cumin Seeds - 1/2 teaspoon
Dry Red Chilli (Halved) - 1
Curry Leaves - 2 sprigs

INSTRUCTIONS

1. To start preparing the Bendakaya Vepudu Andhra Style, gather all the required ingredients.

2. To Prep - Wash the okra in 2-3 exchanges of water and drain the water completely.

3. Using the kitchen towel, wipe all the okra individually to remove any water.

4. Now chop the okra in bite sizes. Set aside.

5. Fine chop the onions and crush the garlic. Keep them aside.

6. To Cook - Heat oil in a heavy bottom pan, add peanuts and roast it to a golden brown, remove only the peanuts and set aside.

7. In the same oil, add mustard seeds and allow to splutter.

8. Add urad dal, chana dal, cumin seeds and dry red chilli. Fry for a few seconds.

9. Now add the chopped onions, crushed garlic and curry leaves. Fry for 2 minutes.

10. Add the chopped okra and fry for a few minutes.

11. Keep the flame to the lowest and cook for 6-7 minutes or until well cooked.

12. Add the turmeric, chilli powder, chilli flakes and salt. Mix well.

13. Allow to cook for a few minutes.

14. Once the okra is cooked completely, the raw smell of spices disappears.

15. Finally add the chopped coriander leaves and fried peanuts. Mix well.

16. Turn off the flame.
