What are Chickpeas?

Chickpeas, also known as Garbanzo Beans, Ceci Bean, Chana, Bengal Gram and Kondakadalai. It is one of the most popular and commonly used legumes in India. It is one of the earliest cultivated legumes.

There are different varieties of chickpeas available in India. Size may be varied from small to large and the colour ranges from Green, Brown, Dark Brown, and White Chickpea.

Another name for white chickpeas is Kabuli Chana, which means "Chickpeas from Kabul". It is a larger and paler kind that is commonly marketed in cans in the United States and around the world.

Dried Chickpeas

As I mentioned above, chickpeas can come in a variety of types. I have used white chickpea/kabuli chana in this recipe. You can pick any type of dried chickpea to follow this recipe. The below method is the same for any type of chickpea.

Why do you soak dried chickpeas?

Chickpeas can be hard to cook and require a fair amount of time. Soaking reduces cooking time significantly. You can soak chickpeas or any legume for at least 8 hours or preferably overnight.

How to soak dried chickpeas?

As I already noted, dried chickpeas can be hard to cook and require a fair amount of time. Soaking them is an essential step before cooking. To soak dried chickpeas -

1. Sort through the dried chickpeas to make sure there are no stones or debris, removing any that you find.

2. Wash the dried chickpeas in 1-2 exchanges of water.

3. Place the chickpeas in a large bowl and cover completely with cold water. If you take 1 cup of dried chickpeas add 3-4 cups of water.

4. Allow to soak overnight at room temperature or place them in the refrigerator.

How to cook soaked chickpeas in a pressure cooker?

Once the dried chickpeas have soaked, it's time to cook them. Now you can cook them in an open pot, pressure cooker or electric pressure cooker.

Why did I choose the non-electric pressure cooker method in this recipe?

If you compare a non-electric pressure cooker to an open-pot cooking method, the later-mentioned method takes a longer time to cook. So, the pressure cooker method is ideal and helps to speed up the cooking time by almost 50 per cent. Finally, the pressure cooker is easily available in every household compared to an electric pressure cooker like Instant Pot.

To pressure cook the soaked chickpeas -

1. First, drain the soaked water from the chickpeas.

2. Rinse thoroughly in 2-3 exchanges of water.

3. Heat a pressure cooker, add chickpeas and cover with water twice the amount of chickpeas.

4. Add in the salt and a pinch of cooking soda.

5. Allow to boil.

6. Close the lid and cook for 12-15 minutes or 4-5 whistles.

7. Turn off the flame and allow the pressure to subside.

8. Open the lid and take one chickpea using a spoon.

9. Wait for a few seconds and then mash it with your fingers.

10. If it is perfectly mashed, pressure-cooked chickpeas are ready.

You can use these perfectly cooked chickpeas immediately or refrigerate them for later use.

Dried Chickpeas - 1 cup
Salt - as needed
Cooking Soda/Baking Soda - 1 pinch
